A classic 2800 Côtes De Provence Rosé known for its light and fragrant nature, pairs wonderfully with a tomato tart seasoned with herbs de Provence. The dish's combination of savory and sweet complements the wine's floral notes.

Recipe for Provençal Tomato Tart: Ingredients (serves 4):

  • Cherry tomatoes: 400g, halved
  • Puff pastry: 1 sheet
  • Dijon mustard: 2 tbsp
  • Olive oil: 2 tbsp
  • Herbs de Provence: 2 tsp
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat oven to 200°C.
  2. Roll out puff pastry and place in a tart pan.
  3. Spread Dijon mustard over the pastry.
  4. Arrange cherry tomatoes, cut side up.
  5. Drizzle with olive oil and sprinkle herbs de Provence, salt, and pepper.
  6. Bake for 25-30 minutes or until golden.
  7. Garnish with fresh basil.
